This is our temporary "kitchen," shoved unceremoniously into the corner of the living room. You can maybe see why I generally crop it out when posting living room photos.
It looks a little pathetic, but we are SO thrilled to have a functioning fridge after 18 months without... Cold drinks! Ice! Food preservation! Fortunately S's parents live close by and have an open door policy on their home and refrigerator, or we'd have never survived this long.
That said, the little toaster/convection oven is our only means of cooking right now. Our microwave is MIA and we don't have a grill yet... so if anyone has any oven-only recipes, please send them my way! I googled with frustrating results. It doesn't count if you have to brown everything first! Anyway I'd like to try making some little casseroles and stuff just for the fun of it. I think buying a grill is going to become a priority here shortly.
FYI just behind the fridge is the doorway (currently blocked off with insulation and blankets) that will eventually lead into the dining room, with a few steps ascending where the fridge currently sits. Obviously, the dining room is not our #1 priority since we aren't doing a lot of cooking...
But I will if you send me recipes! Oven-only, preferably easily halved to fit into the world's smallest baking dish... Anyone have an inspired ideas?

Boneless chicken breast cut to sizes you are comfortable with. ( I cut'em in half)
Lay'em in your dish, over that, lay swiss cheese. (I like the aged type and lots of it)
Over the cheese, spread a can of Cream of mushroom soup (Campbell's of course)
Cover that with a layer of stuffing.

Put the lid on and bake it for and hour at 350F mmmmmmmmm chicken
I serve it with steamed broccoli.
It takes like 3 minutes to fix, an hour to cook. What's not to like?

A really easy one is pineapple stuffing (it's a family favorite of ours!)
ReplyDelete1 (15.25 ounce) can crushed pineapple, drained
1 (5 ounce) can sweetened condensed milk
1/2 cup white sugar
12 slices white bread, cubed
3 beaten eggs
1/2 stick of melted butter
Mix it all up and bake at 350 for about 30 minutes or until golden on top.
I am by NO means a cook, but a crock pot might be a good investment. And I think you can find them pretty cheap! :)

- 16 chicken wings
- 1 1/2 c. bottled chili sauce
- 3 T. Tabasco Sauce
- 1/2 c. BBQ sauce
Directions
- combine the chili sauce, Tabasco sauce, and BBQ sauce in a bowl
- cut off and discard the wing tips (if neccessary)
- put the wings the bowl the with sauce and coat the wings
- put wings on a pan and cook on high for 10 minutes (or until the juices run clear)
Baked French Toast
Ingredients:
- 4 1" thick slices of bread
- 4 eggs
- 1 1/3 c. milk
- 2 t. vanilla
- 2 T. sugar
- 1 t. nutmeg (optional)
- 1 t. cinnamon
- rind from 1/4 of an orange -or- 1 T. orange juice
Directions:
- whisk eggs, milk, vanilla, sugar, nutmeg, cinnamon,and orange rind.
- dip each bread slice in the mixture to saturate both sides
- lightly butter the baking dish
- cook on high for 8 minutes, flip the toast and cook on high for 6 minutes.
Bruschetta
Ingredients:
- fresh diced tomatoes
- fresh basil
- french bread cut into 1" slices
- olive oil
Directions:
- put the tomatoes and basil on each round of bread
- drizzle with olive oil
- cook just until its heated
(if you prefer you can also toast the bread first and then put the basil and tomato, then drizzle with olive oil, I like it this way in the summertime)
You might have to adjust the temp/time to your specific toaster oven, but these should get you going =)
